Amazing Avocado Salad

We had the best dinner last night. On this new fitness regime that we are on, we have to concentrate on eating foods that are low in carbs and sodium and finding ones that are high in healthy fats. Avocado's are a great source of healthy fat and this recipe makes it easy to enjoy them. I don’t know about you, but I love avocados. I could eat them all day!

I found this recipe on http://www.bodybuilding.com/ and completely loved it. As a matter of fact, I adored it so much it will most likely become my signature dish. Don’t be surprised if you ever come to dinner and this is on the menu. I could eat it for breakfast, lunch and dinner.

Amazing Avocado Salad

2 avocados, peeled, pitted and diced
1 sweet onion, chopped
1 green bell pepper, chopped
1/2 cup sliced broccoli
1 large ripe tomato, chopped
1/4 cup chopped fresh cilantro 1/4 cup Italian salad dressing (I used the one and only Fanny’s Lite Dressing, which can only be found in Massachusetts grocery stores)
1/8 cup lime juice

In a bowl, combine avocados, sweet onion, bell pepper, broccoli, and tomato. (Let me apologize for the quality of these photos now. After a couple of glasses of wine while cooking, I was just too lazy to take out the good camera.)
In a separate bowl, combine Italian salad dressing, lime juice, and cilantro.
Drizzle over vegetables and toss to coat. I served it with grilled chicken marinaded in Mrs. Dash's Zesty Garlic and Herb Marinade.
Trust me… you will love it!
